four steps, and one of them is ours.

Nothing is stored, nothing is pre-roasted and nothing is drop-shipped. Your bag is one of the eleven batches that come off the drum on a Thursday.

  1. 01

    Pick a coffee, or don’t

Name one of the four, or leave it on roaster’s choice and take whatever came out best that Thursday. Roughly half the list leaves it to us.

  2. 02

    Pick a rhythm

Weekly, fortnightly or monthly. Two people drinking a cup each a day get through a 12 oz bag in nine days, which is why The Pair exists.

  3. 03

    We roast on Thursday

Your bag is part of the eleven batches, not pulled off a shelf. The batch number and its roast log go in the box.

  4. 04

    Friday it moves

In the post by ten, or on the pickup shelf from 8:00 with your name on it. Flat $6 anywhere in the lower 48, free over $60.

The only difference between them is how often the drum runs for you. Nobody is locked out of a coffee, a grind or a price by picking the small one.

A roast date, not a best-before. The log for the batch you were actually sent. A card telling you what to do with it in the brewer you named. And the line saying what the farmer was paid, which is the only number on the box we would be embarrassed to leave off.

There is no retention script, no offer of 20 % off to stay and nobody to ring. If it is not working, it is not working — and a roastery that has to trap you is a roastery with a coffee problem.

The cut-off
Tuesday, 11:59pm. Anything you change before then lands in Thursday’s roast; after that it goes to the following week.
Skip a week
One tap in any email we send. No reason asked, no limit on how many.
Pause
Up to twelve weeks, and your price is held for the whole pause. Longer than that and we close it rather than sit on your card.
Cancel
Two clicks from the same email. No phone call, no form, no offer of 20 % off to stay. If it isn’t working, it isn’t working.
Change the grind
Free, any week, including switching between brewers. Tell us the machine and we’ll set it to that.
Card and receipts
Charged the Wednesday before each roast. The receipt names the batch you are about to be sent.

06questions · asked by email

what the desk gets asked.

Answered here in full rather than after you have paid. All six are answers this concept build is prepared to put its name to.

What arrives the week I sign up?
If you join before Tuesday 11:59pm, your first bag is roasted that Thursday and moves on Friday. Join on a Wednesday and you wait eight days — we would rather tell you that than roast something on Monday and call it fresh.
Can I have the decaf on a standing order?
Yes, on any of the three. One caveat we will keep repeating: decaf stales faster than the rest, so take Last Call as the 12 oz and not the 2 lb.
Do you ship outside the lower 48?
Not yet. Alaska, Hawaii and Canada cost more to post than the coffee costs to buy, and a $24 shipping line on a $19 bag is not a subscription, it is an apology. Ask and we will tell you honestly when that changes.
Can I give one as a present?
Three months of The Pair is $102, paid once, and it stops on its own — no auto-renew, no card left on file. We post the first box with a card in your handwriting if you send us the words.
What if I am away?
Skip the weeks you are gone, or pause the lot. Both are in every email. Coffee sitting on a doorstep for a fortnight is the one way to undo everything the eleven seconds at the drop were for.
Is there a contract?
No. There is no minimum, no notice period and no tier you get locked out of. The only thing you lose by leaving is the cupping seat, and you can buy that for $15 like everybody else.
