Every sack that comes through the roll-up door carries one farm, one lot, one harvest. We buy through two importers who publish what the farmer was actually paid, and we print that number on the back of the bag. If we can’t get it, we don’t take the lot — which is why the shelf is short and changes.

Last Call is the exception: its green arrives already decaffeinated from El Rosal, in Nariño, so it is bought by the pallet from the processor rather than by the sack from the farm. We print that on the bag too.

Beans keep; grounds do not. Whole bean is the default and it is what we would take home. But a bag ground wrong is a bag wasted, so if you are not grinding it yourself, name the brewer — or the machine, by make — and we will set the burrs to it on the day it is bagged.
